Yeld : 35 hectolitres par ha
Vinification : Mechanical night harvesting with onboard sorting, no sulfiting at the crush, traditional vinification at 26-27°C. One rack-and-return per day, one month of maceration, malolactic fermentation in tanks, followed by aging for 14 months in French oak barrels and demi-muids, medium toast, with both new and used barrels. 2g/hl of SO2 added when transferring to barrels.
Aging : 8 to 10 years, serve at 18°C/64°F
Tasting notes : Dark color. Nose of candied black fruits and truffles. Notes of undergrowth. Full on the palate, with elegant spices and a touch of oak. Silky tannins.

Variety : Roussane 80% Grenache blanc 20%
Soil : Pebbles
Yeld : 40 hectolitres par ha
Vinification : Night harvest, blended grape varieties, acidification in the hopper, gentle pressing, light settling, inoculation with yeast in tanks, followed by vinification in exclusively French oak demi-muids. Aging for 8 to 10 months with weekly lees stirring in the month following the end of fermentation. Lees aging.
Aging : 4 to 6 years, serve at 12°C/54°F
Tasting notes : brilliant color with golden reflections. Nose of white flowers and vanilla. Ample and finely wooded mouth. Notes of candied white fruit, acacia flower and lime blossom.
