Heloïse, our daughter, was the inspiration for this iconic cuvée of our property. The wine breaths the joy of life and happiness. The array of varietals and terroirs that create it offer all of their personalities to the wine.

Description

Héloïse Rouge

Wine : AOP Costières de Nîmes 2021

Variety : Syrah 50% Grenache noir 40% Marselan 10%

Soil : Pebbles

Yeld : 50 hectolitres par ha

Vinification : Mechanical night harvest with onboard sorter, no sulfiting at vatting, traditional vinification at 26-27°C. 1 delestage per day, 1 month of maceration, malolactic fermentation in tank followed by 14 months of aging in French oak barrels and demi-muids, medium toast, new, one wine, and two wines. 2g/hl of SO2 added when transferring to barrel.

Aging : 4 to 6 years, serve at 18°C/64°F

Tasting notes : Perfumed and inviting, with spice and black pepper leading on to a palate rich with bay leaf, black cherry, tapenade and silky, svelte tannins

Héloïse blanc

Wine : AOP Costières de Nîmes 2022

Variety : Roussanne 80% Grenache blanc 20%

Soil : Pebbles

Yeld : 60 hectolitres par ha

Vinification : Night harvest of grapes together, acidification in the bin, 8 days of pomace maceration, yeast addition, vinification at 18°C, batonnage for 1 week, quick racking.

Aging : 4 to 6 years, serve at 12°C/54°F

Dégustation : Tasting notes: Bright color with green nuances. A nose of linden blossoms and white fruits. Full mouth feel, with nice acidity. Beautiful minerality. Mangos and white peaches.

Héloïse Rosé

Wine : AOP Costières de Nîmes Rosé 2022

Variety : Grenache noir 40%, Cinsalut 30%, Vermentino 20%, Syrah 10%

Soil : Pebbles

Yeld : 50 hectolitres par ha

Vinification : Night harvest of blended grape varieties, acidification in the bin, fractional sulfiting, gentle pressing, light settling, yeast addition, fermentation at 15°C for 3 weeks, light racking and aging on fine lees..

Aging : 4 to 6 years, serve at 12°C/54°F servir à 12°C

Tasting notes : Bright color with green nuances. A nose of linden blossoms and white fruits. Full mouth feel, with nice acidity. Beautiful minerality. Mangos and white peaches.
