Vinification :: Harvested at night, no sulfiting upon entering the cellar, traditional vinification in concrete tanks with 1 gentle pump-over per day, fermentation at 24-25°C, maceration for 1 month in full tanks
Aging : 8 to 10 years served at 18°C
Tasting notes : You will be seduced by this intense first nose which exudes aromas of jammy red fruits, licorice and paprika. On the attack, you will bite into a ripe grape, as simply as the delicacy aroused by a perfect fruit: the vinification, almost without inputs (a little sulphite when bottling) elegantly reveals the sweet and enveloping tannins that nature has offered. The very expression of refinement, this wine reflects the quintessence of our terroir, the pinnacle of the art of winemaking, the one that leaves its place to great wines.
