Vinification : Mechanical night harvesting with onboard sorting, no sulfiting at the crush, traditional vinification at 26-27°C. One rack-and-return per day, one month of maceration, malolactic fermentation in tanks, followed by aging for 14 months in French oak barrels and demi-muids, medium toast, both new and used. 2g/hl of SO2 added when transferring to barrels.
Aging : 8 to 10 years, serve at 18°C/64°F
Tasting notes : Dark color. Nose of candied black fruits and truffles. Notes of undergrowth. Full on the palate, with elegant spices and a touch of oak. Silky tannins.
