DDuring a biodiversity diagnosis carried out on our vineyard, a vigilant naturalist witnessed the rarely observable sunbathing of the ocellated lizard, a protected species in our countryside.
Indeed, our plateau of rolled pebbles offers it a quite comfortable habitat, as long as it finds piles that provide shelter.
No matter, we have set up lodgings for it, made with heaps of pebbles and a shelter underneath, so that it stays with us for a long time.
We hope that each year, we observe more than the previous one!
This rare presence is certainly worth a cuvée, without a doubt.

Vinification :
Night harvest of blended grape varieties, pomace maceration, gentle pressing, light settling. Fermentation at low temperature.
Aging : 2 to 4 years served at 12°C
Tasting notes : Pale robe with intense pink reflections. Nose of white peach, wild strawberry. The palate is fresh with refreshing notes of red currant and pink grapefruit.
