Variety : Syrah 50%, Grenache 40%, Marselan 10%
Soil : Pebbles
Yeld : 50 hectolitres par ha
Vinification : Nighttime harvest, no sulfiting upon entry to the cellar, traditional vinification in concrete tanks with one rack-and-return per day, fermentation at 24-25°C, three weeks of maceration at a warm 30°C. 2g/hl of SO2 added post-malolactic fermentation.
Aging : 4 to 6 years, serve at 18°C/64°F
Tasting notes : Perfumed and inviting, with spice and black pepper leading on to a palate rich with bay leaf, black cherry, tapenade and silky, svelte tannins.
